  • mini baguette or Italian bread, about 9" long

    1/4 · split lengthwise, or 2 split English muffins

  • pizza sauce

    1/2 cup

  • part-skim mozzarella or cheddar cheese, shredded

    1/2 cup

  • green pepper, chopped

    1/4 cup

  • mushrooms, fresh or canned, sliced

    1/4 cup

  • other vegetable toppings

    as desired, optional

  • Italian seasoning

Instructions

    Wash hands with soap and water.

    Toast the bread or English muffin until slightly brown.

    Top bread or muffin with pizza sauce, vegetables and low-fat cheese.

    Sprinkle with Italian seasoning as desired.

    Return bread to toaster oven (or regular oven preheated to 350 degrees F).
