Ingredients
oat bran
2 1/4 cups
brown sugar, firmly packed
1/4 cup
cinnamon
1 1/2 teaspoons
baking powder
1 tablespoon
egg
1 large
orange juice
1/2 cup
non-fat (skim) milk

canola oil
2 tablespoons
unsweetened applesauce

banana, mashed

raisins, dates, or other dried fruit

Wash hands with soap and water.

Preheat oven to 425 degrees F.

In a large bowl, mix the first four dry ingredients. Set aside.

In another bowl, mix the egg with orange juice, milk, and oil.

In small bowl, mix fruit and blend with dry ingredients.

Add the liquid ingredients to the dry until it is moist.

Spray muffin tin with a non-stick coating. Pour batter into muffin tins.

Bake for 15 to 17 minutes. Remove muffins from pan after 10 minutes. Cool on a rack. Freeze muffins for later use.
