Ingredients

  • 85% lean ground turkey

    1 pound

  • onion, chopped

    1 medium

  • carrots, diced

    5 medium

  • zucchinis

    2 medium · or other squash

  • potatoes, diced

    2 medium

  • salt

    1 teaspoon

  • black pepper

    optional, to taste

  • cumin

    1/2 teaspoon

  • low-sodium canned tomatoes

    1 1/4 cups

  • cornstarch

    1 teaspoon

Instructions

    Wash hands with soap and water.

    Brown ground turkey in a non-stick frying pan.

    Add onions, carrots, zucchini, potatoes, salt, pepper, and cumin. Sauté for about 5 minutes.

    Add tomatoes and just enough water to cover. Bring to a boil, then lower heat and simmer, uncovered, until vegetables are tender.

    Dissolve cornstarch in about 1 tablespoon of cold water, add to mixture, bring back to a boil until gravy thickens. Serve.
