  • low-sodium canned corn

  • low-sodium black beans

    2 cans · 15.5 ounces each - drained and rinsed

  • diced tomatoes with green chilies

  • onion

    1 medium · chopped

  • olive oil

    3 tablespoons · or cooking oil of your choice

  • fresh squeezed lemon juice

    1/3 cup · can also use lime juice

  • black pepper

Instructions

    Mix the salad ingredients in a large bowl.

    Mix the dressing ingredients in a small bowl.

    Pour dressing over corn mixture and mix well.
