Ingrédients

  • 800 g Beef chuck
  • 500 ml Red wine
  • 100 g Bacon
  • 200 g Pearl onions
  • 200 g Mushrooms
  • 3 medium Carrots
  • 2 tbsp Tomato paste
  • 300 ml Beef broth
  • 4 sprigs Fresh thyme
  • 2 pieces Bay leaves

Instructions

    Cube beef and brown in batches. Set aside.

    Cook diced bacon until crispy. Add pearl onions and carrots.

    Add tomato paste, wine, broth, thyme, and bay leaves. Return beef.

    Braise covered at 160°C for 2 hours.

    Add mushrooms in the last 30 minutes. Season and serve.
