- 600 g Oxtail
- 80 g Peanut butter
- 1 tbsp Annatto powder
- 1 medium Eggplant
- 100 g String beans
- 2 heads Bok choy
- 1 large Onion
- 4 cloves Garlic
- 2 tbsp Toasted rice flour
- 3 tbsp Shrimp paste (bagoong)
Instructions

Boil oxtail until tender, about 1.5 hours. Reserve broth.

Sauté onion and garlic. Add annatto powder.

Add broth, peanut butter, and rice flour. Simmer 15 min.

Add oxtail and vegetables. Cook until veggies are tender.

Serve with steamed rice and shrimp paste on the side.
