Ingrédients

  • 1.2 kg Beef short ribs
  • 400 ml Red wine
  • 300 ml Beef broth
  • 1 large Onion
  • 3 medium Carrots
  • 2 stalks Celery
  • 4 cloves Garlic
  • 2 tbsp Tomato paste
  • 4 sprigs Fresh thyme
  • 2 pieces Bay leaves

Instructions

    Season and brown short ribs on all sides.

    Sauté onion, carrots, celery, garlic. Add tomato paste.

    Deglaze with wine. Add broth, thyme, bay leaves. Return ribs.

    Braise covered at 150°C for 2.5 hours until fork-tender.

    Reduce sauce. Serve ribs with mashed potatoes or polenta.
