Ingrédients

  • 4 large Eggs
  • 400 g Canned tomatoes
  • 1 medium Bell pepper
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 tbsp Olive oil
  • 2 tbsp Fresh parsley

Instructions

    Heat olive oil in a skillet. Sauté diced onion and bell pepper for 5 minutes.

    Add garlic, cumin, and paprika. Cook for 1 minute.

    Pour in canned tomatoes and simmer for 10 minutes until thickened.

    Make 4 wells in the sauce and crack an egg into each.
