- 800 g Rack of lamb
- 2 tbsp Dijon mustard
- 60 g Breadcrumbs
- 2 tbsp Fresh rosemary
- 1 tbsp Fresh thyme
- 3 cloves Garlic
- 2 tbsp Olive oil
- 200 g Green beans

Sear lamb rack on all sides.

Brush with Dijon. Press herb breadcrumb mixture onto the meat.

Roast at 200°C for 20-25 min for medium-rare.

Rest 10 min. Slice into chops. Serve with roasted green beans.
