- 3 tbsp Butter
- 2 small Shallots
- 2 tbsp Brandy
- 120 ml Heavy cream
- 1 tbsp Dijon mustard
- 40 g Gruyère cheese
- 1 large Egg yolk
- 1 tbsp Fresh tarragon

Steam lobster tails 6 min. Remove meat and dice. Reserve shells.
