Scallion Pancakes
Crispy Chinese flatbread with layers of green onion, served with soy dipping sauce.

- 130 ml Boiling water
- 6 stalks Green onions
- 2 tbsp Sesame oil
- 1 tsp Salt
- 2 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 3 tbsp Vegetable oil

Mix flour with boiling water. Knead smooth. Rest 20 min.

Roll thin, brush sesame oil, scatter chopped scallions.

Roll into a log, coil, flatten and roll out again.

Pan-fry in oil until golden and crispy on both sides.
