- 350 g Rigatoni
- 1 large Eggplant
- 400 g Canned tomatoes
- 3 cloves Garlic
- 10 leaves Fresh basil
- 40 g Ricotta salata
- 4 tbsp Olive oil

Cube and fry eggplant in olive oil until golden. Drain.

Sauté garlic. Add tomatoes, simmer 15 min.
